Sausage veggie fried rice

Ingredients

2 cups cooked rice
1½ cups sausage
1 cup broccoli
½ cup bell peppers (choose your color)
½ cup mushrooms
¼ cup spring onion
1 small onion
1 medium carrot
2 teaspoons garlic
1 tablespoon sesame oil
3 tablespoons soy sauce
2 tablespoons olive oil
Sesame seeds for garnish (optional)

Instructions

Prepare ingredients; slice broccoli and mushrooms; dice sweet pepper, onion and carrot; coin sausage; mince garlic; finely chop spring onion, put aside

In a saucepan over medium high heat, heat oil. Add garlic, cook until tender; about 2 minutes

Add sausage and onion. Stir fry for 3-4 minutes; or until onion is cooked and sausages start to brown

Add carrot, bell peppers and broccoli. Cook for another 3 minutes, or until  soft; stirring frequently

Add mushrooms, cook for 1 minute

Stir in rice, spring onions, sesame oil and soy sauce. Let it cook for 2 more minutes, stirring frequently

Garnish with sesame seeds is desired

Serve hot
