Banana oatmeal pancakes

Total time; 20 mins


2 medium ripe bananas
2 large eggs
½ cup oats
¼ tsp cinnamon
¼ salt


Put the oats in a blender and blend until fine

Using a fork or potato masher, mash bananas in a bowl until smooth

Stir in eggs, blended oats, cinnamon and salt until well combined

On a nonstick pan or griddle over low-medium heat, lightly grease the pan with butter. Pour ¼ cup of banana oats mixture onto a pan/ griddle. Spread out gently into a round shape with the back of your ladle or measuring cup

Cook until the underside is golden and bubbles begin to appear on the surface

Using a spatula flip the pancake

Cook on both sides until golden. Repeat with remaining mixture

Serve with banana, honey or maple syrup
