Honey pineapple prawns skewers

500g prawns  (or shrimp)
1 cup fresh pineapple
3 tablespoons butter
¼ cup honey
1 tablespoon garlic
2 tablespoon low sodium soy sauce
1 tablespoon fresh lemon juice
Salt and cracked pepper to taste
Lemon slices (to serve)
2 tablespoons fresh parsley leaves


In a deep wide plate or bowl, soak the wooden skewers for at least 20 minutes before cooking

While skewers are soaking, prepare ingredients. Mince garlic; squeeze lemon; dice pineapple; chop parsley leaves and slice lemon for serving, put aside

In a small saucepan over low-medium heat, melt 2 tablespoons of butter. Stir in honey, garlic and soy sauce until well combined. Simmer for 3-4 minutes, or until the sauce thickens. Remove sauce from heat, add lemon juice

Arrange prawns onto skewers, alternating with pineapple pieces. Season  with salt and cracked pepper

Spread the honey garlic butter sauce on both sides of the prawns skewer until well coated

In a preheated frying pan or skillet over medium heat, add prawns skewers in the remaining butter, melted. Cook until it starts to turn into pink, turn to the other side

Using a brush, coat prawns skewers with more sauce every now and then

Cook prawns for about 3-4 minutes, or until well cooked but not dry

Serve immediately while hot as desired
