Nagrisi kofta sauce

1 large onion
2 teaspoons garlic
2 teaspoons ginger
3 medium tomatoes
1 teaspoon 1 ground coriander
1 teaspoon cumin powder
½ teaspoon turmeric powder
½ teaspoon cayenne pepper
1 teaspoon garam masala powder
8 tablespoons yogurt
2 tablespoons cooking oil
Salt to taste
6 scotch eggs, for recipe click here
Parsley leaves for garnish


Prepare ingredients; dice onion; mince garlic; grate ginger; finely chop parsley leaves

Put tomatoes in a blender/ food processor to make a paste

In a saucepan over medium heat, add cooking oil and onion. Stir fry until lightly browned then add ginger and garlic. Cook for about 2 minutes, or until soft

Add tomato paste, garam masala, cayenne pepper, ground coriander, cumin powder, turmeric powder and salt. Mix well then cover with a lid

Let mixture cook on medium low heat until tomatoes are well cooked, about 6-8 minutes

Add the yogurt and ½ cup water. Let mixture cook for another 2 minutes the gently fold in the scotch eggs. Make sure they are well coated on all sides. Let mixture cook for another minute

Garnish with parsley leaves, serve as desired
