Simple Greek Salad

½ cup red bell pepper
¼ cup olives of your choice
1 medium tomato
½ small red onion
1½ tablespoons fresh parsley
2 tablespoons olive oil
1 tablespoons red wine vinegar
½ teaspoon dried oregano
¼ cup feta cheese
½ medium cucumber
Salt and pepper to taste


Make pickled onion, put aside. See recipe for lemon and vinegar here

Prepare ingredients; seed and dice tomato, bell pepper and cucumber; slice olives into halves lengthwise; chop cilantro; cut feta cheese into small cubes

Combine all ingredients except feta cheese into a medium bowl to blend

Season with salt and pepper then gently fold in the cheese

Serve as desired
