Mint-Cookies ice cream

2 cups whipping cream
1 cup sweet condensed milk
1 teaspoon vanilla
1-2 teaspoons mint extract or 6 drops of peppermint oil
20 chocolate sandwich cookies
1 teaspoons green food coloring


Place the cookies in a zip-top plastic bag and seal. Lightly bang on the bagged cookies with a rolling pin or pan to crush the cookies, put aside

In a large bowl using an electric mixer, whip heavy cream, green color color, peppermint oil/ mint extract and vanilla extract together for a few minutes until stiff peaks form. (Adjust the food color and mint flavor to your preference)

Add in the sweetened condensed milk and whisk until combined

Fold the roughly crushed cookie chunks

Spoon mixture into a plastic container or a loaf pan

Freeze for several hours or over night until frozen
