Banana-Cookies ice cream

2 cups whipping cream
1 cup sweet condensed milk; see recipe for home-made condensed milk
1 tablespoon vanilla
20 chocolate sandwich cookies
2 ripe bananas
2 teaspoons yellow food coloring (optional)


Place the cookies in a zip-top plastic bag and seal. Lightly bang on the bagged cookies with a rolling pin or pan to crush the cookies, put aside

Mash bananas, put aside

In a large bowl using an electric mixer, whip heavy cream, yellow color (if using) and vanilla together for a few minutes until stiff peaks form

Add in the sweetened condensed milk and whisk until combined

Add in mashed bananas until well combined

Fold the roughly crushed cookie chunks

Spoon mixture into a plastic container or a loaf pan

Freeze for several hours or over night until frozen
