Black eyed peas Fritters/ Bhajiya

Ingredients

2 cups black-eyed peas
1 large Onion
2 chiles (red and green)
3 tablespoons lemon juice (optional)
1 teaspoon baking powder
1½ teaspoon ginger
¼ cup cilantro leaves
Salt to taste
Oil for deep frying

Instructions

Wash and soak the black-eyed peas in hot water for at least 8 hours or better overnight

Dice onion, chiles; finely chop cilantro; grate ginger. Put aside

Drain black-eyed peas

Place black-eyed peas, lemon juice and chillies into a blender or food processor to make a paste. (make sure your machine is powerful enough)

Add the onion and cilantro leaves to the mixture, blend for the last 20 seconds. Place mixture into a mixing bowl, add salt and baking powder

In a frying pan over medium heat, bring oil to boil. Using 2 tablespoons, shape dough into small patties

Deep fry the patties in hot oil

Cook until golden brown and crispy

Remove patties from the oil. Transfer to a plate lined with paper towels for the excess oil to absorb

Serve hot with chutney
