Pineapple-mango salsa

Whole pineapple
1 cup pineapple, diced
1 cup mango, diced
1 cup tomato, diced
¼ cup cilantro, chopped
¼ cup pickled onion
3 tbsp lime juice
Salt and Pepper
¼ cup spring onion (optional)


Prepare onion either lemon pickled onion or vinegar pickled onion, put aside

Cut pineapple in the middle

Use a spoon to scoop out the flesh, make sure you leave enough flesh on the sides to keep the bowl sturdy

Drain any juices, wash and dry, put aside

Using a cutting board, dice pineapple, mango and tomato. Finely chop cilantro and spring onion

Drain pickled onion

In a bowl, mix together diced pineapple, diced tomato, diced mango, pickles onion, chopped cilantro, chopped spring onion, lime juice. Season with salt and pepper

Transfer the salsa to the pineapple bowl

Refrigerate for at least an hour before serving to let the flavors mingle
