Banana-chocolate chunks muffins

3 medium ripe bananas
1/2 cup sugar 
1/4 cup butter, melted
1/2 cup plain Greek yogurt 
2 large eggs
1-1/2 teaspoon vanilla
2-1/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1-1/2 cups all purpose flour
1 cup chocolate chunks (optional)



Preheat oven to 175 degrees C. Grease a muffin pan, put aside. In a large bowl, use a fork or potato masher to press down on the bananas until well mashed, put aside

Add sugar, melted butter, yogurt, eggs and vanilla. Whisk until well combined then whisk in the salt, baking powder and ground cinnamon; whisk until you have a smooth batter

Add flour into the mixture, mix until just smooth. Do not over-mix the batter as this will make the muffins hard. Fold in the chocolate chunks if using

Divide the batter into two thirds full of 12 muffin cups .

Bake for 18-22 minutes, or until skewer inserted in the middle comes out clean

Cool in the muffin pan for 5 minutes before moving them to the wire racks to cool completely
