Grilled chicken stir fry

1 large grilled chicken
2 tomatoes
1 large onion
1 large carrot
3 halves bell peppers (green, yellow, red)
3/4 tablespoon garlic paste
3/4 tablespoon ginger paste
3 tablespoons olive oil
Salt and pepper to taste
1/4 cup fresh coriander leaves


In a wok/ pan over medium heat, bring oil to boil. Add onion, garlic and ginger paste. Cook until translucent. Keep stirring and make sure the onions do not brown

Add tomatoes; season with salt and pepper. Cover the wok/ pan with a lid, boil until tomatoes are well cooked

Add carrots and bell peppers. Cook for another 2-3 minutes, or until vegetables are cooked to your liking; stirring frequently. You can also add a splash of water in case the mixture looks dry

Add chicken. Mix gently until the chicken is well coated with the sauce. Be careful when mixing; make sure the chicken does not fall apart. Garnish with coriander leaves

Serve hot with the food of your choice
