Crispy sweet and spicy chicken wings

For the chicken

500g chicken wings
Salt and pepper to taste
½ teaspoon ginger powder
4 tablespoons potato starch or corn starch
Oil for deep frying

For sauce

1 tablespoon oil
½ teaspoon garlic
½ teaspoon chili pepper flakes (optional)
2 fresh chiles (optional)
2 tablespoons soy sauce
4 tablespoons rice syrup or corn syrup
1 teaspoon white vinegar
1 teaspoon mustard (optional)
1 teaspoon brown sugar
1 teaspoon sesame seeds
¼ cup spring onion
2 tablespoons peanuts (optional)


Step 1; prepare chicken and ingredients

Finely chop spring onion; slice chiles; mince garlic. Put aside

Rinse chicken wings and pat dry. Separate each wing at the joint into 2 pieces

In a large mixing bowl, place chicken. Season chicken with ginger powder, salt and pepper

Place potato starch/ corn starch onto a shallow plate. Coat chicken well, one piece at a time

Step 2; prepare the sauce

In a wok over medium high heat, bring 1 tablespoon cooking oil to boil. Add minced garlic and chiles. Cook until fragrant, about 30 seconds

Add soy sauce, rice/corn syrup, chili pepper flakes, and mustard sauce, cook for a few minutes; stirring frequently. Add the brown sugar and vinegar, cook until sugar dissolves. Remove from the heat. put aside

Step 3; deep frying chicken

In a frying pan over medium high heat, bring the deep-frying oil to boil. Place chicken into the boiled oil, one at a time. Make sure they are not too crowded. Cook for about 8-10 minutes, or until light brown

Remove from oil, transfer them into a strainer or a plate covered with paper towels for the excess oil to absorb. Let them rest for at least 5 minutes

Return oil to boil. Deep fry the wings again for another 6-8 minutes; or until crispy and golden brown

Remove from oil

Put nuts into the oil, deep fry for 30 seconds to 1 minute. Remove from oil

Step 4. Coat chicken with the sauce

Return the sauce to boil. Add spring onion and sesame seeds

Add chicken until well coated
