Beef Liver in Tomato Gravy

500g beef liver, diced
4 tablespoons cooking oil
1 teaspoon ginger
1 teaspoon garlic
Mixed bell peppers
1 carrot
2 medium tomatoes
1 medium onion
1 chili
Salt and pepper to taste
Cilantro for garnish


Put tomatoes and chili into a food processor to make a paste

Peel, wash and cut liver into bite size cubes; dice onion, bell peppers and carrot; finely chop cilantro; mince garlic; grate ginger

In a large pan over medium heat, bring the oil to boil. Add onion, followed by garlic and ginger. Cook until tender, about 2 minutes

Add liver; season with salt. Turn around for a few minutes until liver is browned but not well cooked

Add tomato-chili paste, mix well. Cover with a lid, let it cook until tomatoes are well cooked

Add the diced carrot, cook for a minute or 2 then add the bell peppers, cook for another minute; or until cooked to your liking. You can add a splash of water if necessary. Garnish with cilantro,

Serve hot. Enjoy!
