Fluffy Blueberry Pancakes

1¼ cups flour
1 Tablespoons sugar
3/4 Tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 eggs
1/8 cup melted butter, plus more for cooking
1 tsp vanilla
1/2 cup fresh or frozen blueberries


In a large bowl, mix together the dry ingredients; flour, sugar, baking powder and salt

In another bowl, whisk together the wet ingredients; egg, milk, vanilla and butter until well combined

Pour the mixture into the dry ingredients. Mix until combined

Fold in the blue berries

Pour ¼ cup of batter onto a greased warm pan. (you can use round egg/ pancakes rings for perfect round shapes). Cook until the underside is golden and bubbles begin to appear on the surface

Flip the pancake to the other side. Spread some butter on the cooked side. Flip again to the other side and spread butter too. Cook until cooked through

Serve warm with syrup and fruits of your choice
