Buttermilk Banana Bread

1/2 cup unsalted butter softened
1 cup granulated sugar
2 large eggs
1 cup mashed brown bananas (about 2 large sized bananas)
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda


Preheat oven to 175 degrees C. Grease and flour a loaf pan, put aside. In a large bowl, use a fork or potato masher to press down on the bananas until well mashed, put aside

In another large bowl, beat together the sugar and butter until light and fluffy

Beat in the eggs one at a time, until fluffy and aerated

Add mashed bananas, buttermilk and vanilla; mix well

Sieve the dry ingredients (flour, baking powder, baking soda and salt) into the mixture

Mix until well incorporated

Pour the batter into the prepared loaf pan. Bake for 50 minutes or until well cooked in a preheated oven. Remove from oven, let it cool

Slice as desired
