Black eyed peas Fritters/ Bhajiya

2 cups black-eyed peas
1 large Onion
2 chiles
2 tablespoons lemon juice (optional)
1 teaspoon baking powder
1½ teaspoon ginger
¼ cup cilantro leaves
Salt to taste
Oil for deep frying


Wash and soak the black-eyed peas in hot water for at least 8 hours or better overnight

Peel black-eyed peas and drain water. You can also proceed without peeling

Dice onion and chiles; finely chop cilantro; grate ginger. Put aside

Place black-eyed peas and lemon juice into a blender or food processor to make a paste. (make sure your machine is powerful enough)

Add the onion, chiles, ginger and cilantro leaves to the mixture, blend for the last 20 seconds. Place mixture into a mixing bowl, add salt and baking powder

Cover bowl with plastic wrap; refrigerate for about an hour or 2

Deep fry in hot oil. Cook until golden brown and crispy
