Simple Lemon Scones

1/4 cup granulated sugar
1 tablespoon lemon zest
3 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
4 ounces cream cheese, cold and cut into pieces
6 tablespoons unsalted butter, cold and cut into pieces
2 large eggs, cold
1/3 cup whole milk, cold
1 tablespoon fresh lemon juice


1 cup powdered sugar
1 teaspoon lemon zest (optional)
2 tablespoons lemon juice


Preheat the oven to 200 degrees C. Grate lemon zest; squeeze lemon juice

Using your fingers, rub together sugar and lemon zest in a large bowl until well combined

Add all-purpose flour, baking powder and salt. Mix well

In another bowl, blend together the cream cheese, butter and eggs until well combined. Pour the mixture into the dry ingredients bowl together with milk and lemon juice

Knead until smooth. Cut into the shapes of your choice

Bake the scones on a baking sheet for about 15 minutes or until well cooked

Cool on a wire cooling rack

While the scones are cooling, whisk together the powdered sugar and lemon juice until smooth

Drizzle the glaze over the scones

Serve as you wish
