Lemon Pancakes

1½ cups flour
1 tablespoon sugar
¼ teaspoon salt
1 tablespoon baking powder
2 tablespoon vegetable oil
1 egg
1¼ cups milk
1 tablespoon lemon zest
1 tablespoon lemon juice
Butter for cooking


Sift the dry ingredients in a large bowl; flour, baking powder, sugar and salt

Add the wet ingredients; milk, egg, vegetable oil, lemon zest and lemon juice. Whisk until well combined

On a nonstick pan over low-medium heat. Pour ¼ cup of batter onto the pan. Cook until the underside is golden and bubbles begin to appear on the surface

Flip the pancake to the other side. Spread some butter on the cooked side. Flip again to the other side and spread butter too. Cook until cooked through

Serve with syrup and fruits of your choice
