Teriyaki-Beef-Vegetable Stir Fry

Ingredients

For the beef and vegetables

500g steak
1½ cups broccoli
1 cup mushrooms
¾ cup carrots
1 red chilli
Salt and pepper to taste
1 tablespoon olive oil
Spring onions
Sesame seeds for garnish

For the sauce

¼ cup soy sauce
½ cup water
¼ cup brown sugar
2 teaspoons minced garlic
2 teaspoons minced ginger
1 tablespoon of honey
1 teaspoon toasted sesame oil
1 tablespoon + 1 teaspoon cornstarch

Instructions

Step 1; preparations

Slice steak into strips; cut broccoli into florets; slice carrots, chili and mushrooms; mince garlic; grate ginger; finely chop spring onion, put aside

In a small bowl, add cornstarch with 2 tablespoons of cold water until dissolved, put aside

Step 1; make the sauce

In a small saucepan over medium high heat, add soy sauce, water, brown sugar, garlic, ginger, honey and sesame oil. Cook until sugar is dissolved, about 3 minutes. Adjust the heat to high; Add in the cornstarch mixture and boil for another 1-2 minutes, or until sauce has thickened. Remove from heat, put aside

Step 2; Cooking

In a large pan over medium high heat, add broccoli and carrots in 1 tablespoon boiled olive oil. Season with salt and pepper. Cook until vegetables have started to brown and soften. Add 2 tablespoons of water, cook until vegetables are cooked to your liking. Transfer them into a plate, put aside

Adjust the heat to medium high heat. Boil 2 tablespoons of oil then add the steak strips; season with salt and pepper. Cook on both side until cooked to your liking. (Don´t overcrowd the pan, if your pan is small, cook in batches)

Return broccoli, mushrooms and carrots into a pan, mix well with the steak. Cook for about 2-3 minutes then add spring onion and chiles, mix well

Add the sauce. Cook for another 2-3 minutes until warm

Serve as desired, garnish with sesame seeds
