Foil pack sausage and veggies

500g sausages
1 large carrot
2 cups baby potatoes
1 large yellow onion (2 small)
4 medium mushrooms
3 halves bell peppers (red, orange and green)
4 tablespoons olive oil
1/4 cup cheese of your choice; freshly grated, optional
6 cloves garlic
Parsley leaves for garnish


1/2 teaspoon dried basil
1/2 teaspoon dried rosemary-lavender
1/2 teaspoon dried oregano
1/2 teaspoon ground garlic
1/2 teaspoon chili pepper flakes
Salt to taste

PS. Adjust vegetables and seasoning to your liking


Preheat the oven to 200 degrees C. Prepare 3-4 large sheets of aluminum foil, put aside. Coin sausages and carrot; dice bell pepper and onion;  quarter potatoes and mushrooms, put aside

In a saucepan over medium high heat, bring potatoes to boil for 3 minutes. Drain water, put aside

In a large bowl, add all ingredients except potatoes, toss until well combined

Add in potatoes, mix well

Divide the mixture among the prepared sheets of foil. Seal the foil packs tightly so no air escapes, but do not double up foil (only one sheet of foil per pack)

Bake for about 20-30 minutes; or until cooked to your liking. Carefully open the foil pack expecting steam to be released

Serve as desired
