Coconut-Cardamom-Banana Pancakes

Ingredients

1 cup all-purpose flour, sifted
2 teaspoons baking powder
3 tablespoons sugar
½ teaspoon ground cardamom
¼ teaspoon salt
2 eggs
300ml light coconut milk
1-2 ripe bananas
Butter for brushing the pan

Instructions

Slice bananas

In a mixing bowl, add all the dry ingredients; all-purpose flour, sugar, salt, baking powder and ground cardamom. Mix well

Add coconut milk and eggs; whisk until smooth

Brush a non-stick frying pan with butter, over medium low heat. Add ¼ cup batter; top with pieces of bananas

Cook until bubbles start to pop on the surface, and the edges look dry. Turn to the other side until well cooked; about 1 minute. Repeat with the rest of the batter

Serve as desired
