Red Velvet Cake

For the cake

½ cup shortening
1½ cups white sugar
2 eggs
2 tablespoons cocoa powder
¾ teaspoon red food coloring (gel)
1 teaspoon salt
1 teaspoon vanilla extract
1 cup buttermilk
2½ cups sifted all-purpose flour
1½ teaspoons baking soda
1 tablespoon distilled white vinegar

For the Icing/ frosting

5 tablespoons all-purpose flour
1 cup milk
1 cup white sugar
1 cup butter, room temperature
1 teaspoon vanilla extract


Preheat oven to 175 degrees C. Grease two 9-inch round pans (I used 1 big pan and cut the cake into two), put aside. In a large mixing bowl, add shortening and sugar. Beat until soft and fluffy . Add eggs one after another, continue beating until fluffy and aerated

In another bowl, add buttermilk, cocoa powder, salt, red food coloring and vanilla extract. Mix well

Add the buttermilk mixture to the batter, alternating with the flour. Mix until well incorporated

In a small bowl/ glass, add vinegar and baking soda. Gently fold into cake batter

Pour batter into greased pan/pans

Bake in preheated oven until well cooked, about 30-40 minutes. Cool cake completely

While cake is cooling, boil milk and 5 tablespoons flour in a small saucepan over low heat till thick, stirring constantly. Remove from heat, let the mixture cool completely

When the mixture is cool, beat sugar and butter in a mixing bowl until light and fluffy. Add the milk-flour mixture and vanilla, continue beating until soft and aerated

Frost cake layers with the icing/ frosting

Serve as desired

      You need 1 cup milk and 1 tablespoon lemon juice or white vinegar. Just mix the milk and lemon juice or vinegar, let is sit for 5 minutes or until the milk starts to curdle and becomes acidic
