Tortiglioni Bolognese

250g minced beef
250g Tortiglioni pasta
1 medium onion
2 fresh tomatoes
1 tablespoon ginger-garlic paste
3 tablespoons olive oil
140g tin of tomato paste
1 tablespoon beef seasoning
Pepper to taste
Salt if needed
Cheese of your choice (optional)


Place onion and tomatoes into a food processor to make a puree, put aside

In saucepan, boil Tortiglioni in salty water according to the packet instructions; remove from heat 2 minutes before fully cooked. Drain water and wash with cold water

In a saucepan over medium high heat, bring oil to boil. Add minced meat, beef seasoning, ginger-garlic paste and pepper; stirring frequently while breaking the meat apart with a cooking spoon. Let it cook for 5 minutes; or until meat starts to brown

Lower the heat, add the tomato-onion puree. Cover with a lid, let it cook on a medium low heat for about 10 minutes, or until water dries and meat is well cooked

Add tomato paste and a splash of water to the meat. Cover with a lid, let it cook on a low heat for about 5 minutes, or until the sauce thickens

Add the boiled Tortiglioni to the meat with a splash of water if needed. Season with more salt if needed

Serve with cheese if desired
