Creamy chicken fusilli

Creamy chicken pasta

500g chicken breast
3 cups pasta
2 tablespoons olive oil
1 onion
1 teaspoon garlic
1¼ cups milk
1 large tomato
1 tin (70g) tomato paste
¼ teaspoon cayenne pepper
1 cup cheddar cheese
Salt and pepper to taste
Parsley leaves for garnish


Cut chicken into a bite-size cubes; dice tomato and onion; mince garlic; grate cheese; finely chop parsley leaves

Boil pasta according to packet instructions; remove 2 minutes before fully cooked

In a saucepan over medium heat, heat oil. Add onion and garlic, cook until tender; about 1-2 minutes. Add chicken cubes. Cook for about 4 minutes, or until not pink from the outside; stirring occasionally. Season with salt and pepper

Add tomato and cayenne pepper, cook for another 2-3 minutes, or until tomatoes are soft, stirring accassionally. Add tomato paste, mix well

Add milk, cook until well boiled and sauce starts to thicken; add pasta. Let it boil for 2 minutes

Add cheese, mix well, garnish with parsley leaves

Serve hot
