Vegetable-pineapple fried rice

Rice and vegetables

2 cups cooked rice
2 tablespoons olive oil
1 teaspoon garlic
1 small onion
1 small carrot
1/2 cup green beans
1/2 cup mushrooms
1/2 cup pineapple
2 spring onions
Sesame seeds for garnish


1 tablespoon dark or 2 light soy sauce
1 tablespoon sesame oil
½ teaspoon ginger powder
¼ teaspoon white pepper


In a small bowl, whisk together soy sauce, sesame oil, ginger powder and white pepper; put aside

Prepare vegetables; dice onion, pineapple and carrot into very small pieces; slice mushrooms; finely chop spring onion; mince garlic

In a wok over medium high heat, heat oil. Add garlic and onion, cook until tender; about 2 minutes

Add carrot and green beans. Cook for another 2 minutes, or until cooked to your liking; stirring friequently. Add mushrooms for another 2 minutes

Stir in, pineapple, green onions and rice. Mix well

Add the sauce mixture. Let it cook for 1 more minute, stirring friequently

Serve immediately
