Fluffy Pancakes

2 cups all purpose flour
¼ cup granulated sugar
4 teaspoons baking powder
½ teaspoon salt
1⅔ cup milk
¼ cup butter, melted
2 teaspoons pure vanilla extract
1 large egg


In a large bowl, mix or sift flour, sugar, baking powder and salt

Add the milk, melted butter, vanilla and egg. Whisk everything together; starting with the wet ingredients in the middle to the dry ones; until smooth (it´s ok if there will be a couple of lumps left).

Set the batter aside and allow to rest for an hour or more

On a nonstick pan over low-medium heat, lightly grease the pan with butter. You can use round egg/ pancakes rings for perfect round shapes

Pour ¼ cup of batter onto the pan. (If the batter will be too think, add a splash of milk to soften). Cook until the underside is golden and bubbles begin to appear on the surface

Flip the pancake to the other side. Cook on both sides until golden

Serve with fruits, maple syrup or any toppings of your choice
