Chimichurri sauce

½ cup olive oil
2 tablespoons red wine vinegar
½ cup fresh parsley leaves
¼ cup fresh mint leaves (optional)
3-4 cloves garlic
2 red chilies
¾ teaspoon dried oregano
1 teaspoon salt
Pepper to taste


Dice chili into very small pieces (seeds, stem and membranes removed); finely chop mint and parsley leaves, mince garlic (you can also use a vegetable chopper)

Place all ingredients in a bowl. Mix well. Allow to sit for 5-10 minutes to release all the flavors into the oil before using.

Use as needed
