Shrimp-mango-avocado salad

500g shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon garlic
1 tablespoon ginger
2 tablespoons butter
Salt and pepper to taste


4 cups lettuce of your choice
1 cup cherry tomatoes
1 mango
1 avocado
1/2 cup sweet corn
1 small onion

In a medium bowl, combine together sliced onion, lemon and salt; or make pickled onion with vinegar, see recipe here

Mince garlic; grate ginger

In a skillet/ frying pan over medium high heat, melt the butter. Add olive oil followed by garlic and ginger. Cook for about 30 seconds, add shrimp. Season with salt and pepper

Cook for a minute or two, the turn to the other side

Cook for another 2 minutes; or until well cooked. Remove from heat, let them cool for a few minutes

Wash, cut and dry lettuce

Arrange all ingredients in a large serving bowl as you wish. Drizzle the dressing over the salad. Season with a little extra salt and pepper if you wish; garnish with spring onion
