Crispy sweet potato fries

500g sweet potato
4 tablespoons cornstarch
4 tablespoons cold water
Cooking oil for frying
Salt to taste


Peel and cut potato into fries

Wash and dry potatoes with paper towels or a clean dish cloth (this may turn the color of the dish cloth into orange)

In a bowl, mix the cornstarch with the water. Add potatoes and the corn starch mixture. Toss to coat

In a frying pan over a medium high heat, bring oil to boil. Add potatoes; don´t overcrowd the pan and make sure they don’t stick together

Fry until almost cooked; drain on tissue papers or a brown paper bag

Return potatoes into a frying pan for another 1-2 minutes, or until they’re browned and crispy

Season with salt and any other flavorings you want
