Simple banana bread

¾ cup sugar
½ cup butter or margarine, softened
2 eggs
1 cup mashed ripe bananas (3 medium)
1/3 cup milk
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt


Heat oven to 175 degrees C. Grease and flour a loaf pan and put aside

In a large bowl, use a fork or potato masher to press down on the bananas until well mashed, put aside

In another bowl, mix or sieve the flour, baking soda and salt, put aside

In large bowl, beat sugar and butter until light

Beat in eggs until smooth

Stir in  vanilla until well blended

Add milk

Stir in the flour mixture until well moistened

Fold in mashed bananas

Pour batter into loaf pan

Bake for 35 to 50 minutes depending on your oven; or until toothpick inserted in center comes out clean. Cool for 5 minutes

Remove from pan, cool completely, about 1 hour. Wrap tightly and store in refrigerator or serve as desired
