Chicken avocado mozzarella salad

¼ cup balsamic vinegar
2 tablespoons olive oil
2 teaspoons brown sugar
1 teaspoon garlic
1 teaspoon dried basil
1 teaspoon salt


500g chicken fillets
4 cups lettuce leaves of your choice
1 avocado
½ cup cherry or grape tomatoes
1 small red onion
½ cup mini mozzarella / bocconcini cheese balls
Spring onion for garnish
Salt and pepper to taste
2 tablespoons olive oil


Make either vinegar or lemon pickled onion with the red onion, put aside

In a small bowl or dressing bottle, combine all marinade ingredients together, mix well

In a large bowl, place chicken. Coat the chicken with 4 tablespoons of dressing/ marinade. Reserve the remaining marinade for the salad

On a nonstick pan or grill pan over medium heat, bring oil to boil. Add chicken; discard marinade. Cook chicken on each side until well cooked

Transfer chicken onto a cutting board, let it rest for a few minutes

While chicken is resting, wash and dry lettuce leaves

Cut tomato and mozzarella balls into halves; slice avocado; chop spring onion

Slice chicken into strips. Arrange all ingredients into a serving bowl as you like.

Drizzle with the remaining dressing; garnish with spring onion. Season with salt and pepper; if needed
